Orangey Poppy Seed Friands


Friands - small, rich, more-ish almond cakes - have become utterly popular in the last year or so in Australia and many cafes now help them. However, there seems to be a lack of recipes; this one is quick, clear and easy to follow.

  • melted butter for greasing
  • 75g 1 2 cup plain flour
  • 270g 1 2 3 cups icing sugar mixture
  • 150g 1 1 2 cups almond meal
  • 2 tbsp poppy seeds
  • 1 large orange rind finely grated
  • 5 egg whites
  • 180g butter melted cooled
  • 90g 1 4 cup yellowish brown marmalade
